Hi guys. I believe Matt and Caroline were the writers way of showing "normal human beings " in a supernatural town. They have their own problems but they are completely oblivious to everything else. Also it was apart of their character development. Glad your sticking with it. This show had alot of filler episodes. CW could really be greater if they embraced fewer episodes and concentrated on main plot only.
