Writing notes is part of the scientific process. If he were to be unable to continue or even die then his successor will have a better starting point. That's why there are the watchers' diaries.

I only just realized how not so smart it was for Giles to even write that stuff down, clearly outlining that the Key is Buffy's sister. He should be smart enough to protect information (that he's clear he wanted protected from everyone including the Scoobies and the Watchers at the time) even when you consider it unlikely they will find the information. Forget Dawn and Spike, there's always the chance no matter how slim, that writing something like that down could allow Glory to find out. He and Buffy knew who the key was, why bother writing it down when you DON'T want to share the information with anyone. For his own thought process of working out the information he still could have left out spelling out the exact idenitity as he himself would still know when he's going over his notes.

The only reason that I can think of as to why he would be so specific is for future watchers to read, should that become necessary. Even then, future watchers wouldn't really need to be given quite that much information. I can't see how knowing the key's identity would helpful.
