Personal I think Fang keeping their name would be great. It works perfectly well as a demon name; it's gender neutral; and them keeping it feels like a better sign of how far they have fallen then changing it would.

For her demon change, she really needs a new name. Fang was a hunter and sought out his prey, but now his demon form attracts prey and lulls it in to submission. She is like a venus fly trap or a honey trap that attracts and kills its prey by sucking out its life. With the body of a Venus and the aura of a Siren, this new demon form deserves a new name. Fantansia is the best changed name I've heard. Really nails the idea of a seductive Demon while being close enough to Fang to sound like a name change.

I like Fang as her name. As others have observed, I think if any names changed, it would be the Hunter’s. Also, Fang sounds more feminine/demonic to me, personally. Might have Final Fantasy to blame for that one…
