Love this episode, and we get to see a little bit of how Anakin's training is having a negative effect, just a little bit, on Ahsoka since she almost resorted to violence on her pickpocket.

Technically his lightsaber color is very, very light blue but yeah I thought it was white when I first saw it too.

I think back in the day they wanted Blue to be a Padawan's lightsaber color and a Green was meant for the Master's but now I'm unsure lol it would make the most sense to keep the color in relation to progress in the Jedi studies, like how George wanted the Padawan braid and the number of notches on said braid to mean how far along that individual is in his or her training.

That was before the canon revamp and its clearly white lol.. I mean before Lucas didn't hold much significance with the lightsaber colours, it was just Sith keeping red. Then Disney retconned it all and said the lightsaber colours were crafted by using the force, Red for anger, hate and all dark sided feelings and white for the purest light side balanced feelings. So Ahsoka was supposed to get the only white sabers but Master Sinube clearly had white as well lol

Everything you just said is wrong. It's confirmed by Dave Fonli and on star wars.com that the lightsaber color is a very light blue. Also you get a red lightsaber by bleeding a kyber crystal. You get white by purifying a red crystal which is what happened in the Ahsoka book when she faced a inquisitor.
