It’s possible that it isn’t a wine cellar at all. Maybe the “cellar” door leads to the underground tunnels in the opening. Food for thought

I think it's possible (hear me out before you roll your eyes XD) that the Grimm hand Cinder has, the hands grabbing Qrow and Ruby turns to fight off and the flurry of hands Salem summons on Hazel when he tries lying to her are one and the same Grimm (all mentioned look eerily similar). To go further, I believe it is also the one the will encounter on this farm. I think either like John Foust said before that it ISN'T a cellar and actually underground tunnels OR it is an ordinary cellar that after so many years began to crack and revealed some old tunnels. The people may have investigated and found something scary and then decided to lock it up or maybe didn't notice it at all. I think this particular Grimm can sense fear and dark emotions (like any other Grimm) but can actually bring out those fears and dark thoughts to surface, in a way to overwhelm and encumber its victims and then slowly drain them of their life force as they sleep. While I'm deep diving down this rabbit hole train of thought, I want to suggest the Grimm could be based on Cthulhu... A beast that is supposedly so terrifying that gazing directly upon its form will drive you insane. It is also described as having wings and an octopus like head with long human like arms and legs and countless tentacles around its mouth. Just saying... My thoughts on it are perhaps it can go wherever negative emotions are heavily felt and can travel through tunnels that connect anywhere on Remnant. X_X So scared for the girls and Qrow and Oscar. So I think Qrow will find the alcohol and with his negative emotions flared the cellar will rumble. It'll cut to Ruby and co. and they'll eventually realize our loveable uncle is missing. They go down to the bar and the door is open, they head there and it leads to a hole in the wall that connects to underground tunnels... here to save Qrow they stumble upon the Grimm hands and Ruby will use her eyes out of fear of someone's life (or maybe Maria will use her own?) and save the day. I don't think the Grimm will be defeated but will retreat back to Salem... Giving Salem the exact location of Ruby and the others (as the damage to this Cthulhu Grimm or whatever it is will be evident to have been hit with a silver-eyed blast). Caleb is like me every time a crazy thought enters me head XD One more thing... (I may be the only one who would quote that ) if anyone can answer this because it confuses the heck outta me... Why does everyone refer to Ozma as Ozpin? Even Oz himself calls himself Ozpin when the truth SHOULD be that Ozpin is dead and it's Ozma they are speaking to. Why does he have Ozpin's voice and even Hazel referred to him as Ozpin... On that note, Hazel even tells Ozpin back in Vol 5, that he'll (Ozpin) will die over and over again which isn't correct. Ozpin will die ONCE... Ozma will die over and over again. This really bothers me and it seems I'm the only one bothered by it XD

Another posibility of why goes after Cinder. Neo had a lot of time to think about on who to blame for Roman's death. To Neo Ruby was not an adversary that could have taken Roman out even if she tried. So when Cinder said take it out with little red, Neo looked even more angry. Almost as if she said admit what you did and don't divert the blame. Because Roman might have not died if he never had met Cinder. So because Cinder's new powers were a surprise, she has to make believe until the moment to kill comes. And a crazy theory of mine is that Neo will become the next Fall maiden if she kills Cinder. And might even Join team Rwby later along the line. One Last thing what if Qrow goes into a coma after the fight against this grimm and that's how we get flashbacks about team STRQ. And as Ruby gets her silver eye training, if Maria's semblance is what is speculated to be talking to the death. Summer ghost might wake him up and he wont be a druncle no more.

To answer the questions about Oz, I think it's more about what they're all familiar with. The girls have lived knowing who Ozpin was their entire life and studied under him for 2-ish years, at this point, before these revelations. Qrow has literally never called him anything else and been with him for at least a decade. As for Ozpin himself, I think its mainly recency bias. Ozpin is the most recent soul he bonded with before Oscar, and Ozma and Ozpin had quite a few decades in order to bond and become one person. We also know Ozma changes with every reincarnation through shared experience, so he could just be more comfortable with Ozpin rather than Ozma now. As for Hazel's threat, well, probably just standard bad guy threats.
