Great episode, it gave me the idea that the demon lord was not an actual demon but rather the embodiment of demonkind, more of a concept, an idea, their god perhaps. The idea of reaching the goal no matter the cost made flesh. To be the biggest baddest bestest…. You could only destroy that concept if you could understand and visualize a world where that concept is not fundamental. Seirei seems to think that reaching your goal is the only thing that matters, she has basically built the magic organization in the image of reaching your goal is what matters. Flamme probably hated demons so much that it was the only thing that mattered. Therefore neither of them could kill the demon lord. Frieren is more, its the journey to the goal that makes the goal worthwhile not the goal itself. So she could kill him. I think Himmel’s nature was the final key to that, with his wouldn't you rather have a fun and ridiculous journey than. Sorry for the long post.

Not sure if anyone mentioned it yet, but you've no doubt noticed that this anime/story uses a lot of German words to name things (cities, spells, animals, people, etc). A lot of the German words used are related to a characteristic of what is named with it. Denken means 'thinking' and Stille means 'Silence', for example. Could be cool to actually look up the meaning of the words they use. Frieren means cold, Stark means Strong and Fern means distant for example (which all also describe a character trait of them). And Eisen means iron, likely referring to his iron will. By the way, the ß letter is not a B, but it's pronounced like a double s. So basically it's ss.
