The fact that diamond is harder than steel is a misconception. In reality, diamond is very ressistant to scratches or friction, that's why it's used to etch steel or iron (like in drills), but it is also very easy to break or cut from the right angle. That's why a diamond plate wouldn't be effective, it would shatter under minimal force.

Mild steel has a Vickers hardness value of around 9 GPa while diamond has a Vickers hardness value of around 70 – 100 GPa" this is why most stories write it as diamond being better. while yes it can shatter easier it also is technically harder. not to mention if Bleach cared enough there is way more he could have done than steel as his defense, it wasn't the toughest thing and they could have pushed Kenpachi more to show just how much he can cut through hardness-wise. they did let him cut a meteor tbf but in terms of hardness more could have been done I think
