Zuko survived the explosion because he bended a ball of fire to protect himself from it. You would see it happening if you watch it in slow motion. Not a lot people catches it on their first viewing.

I like how they dealt with sexist traditions in this episode. They didn't talk down to you. They didn't make Pakku a HUGE bad guy to emphasize the sexism. They just showed it through actions and how Katara earned his respect.
