On the massive pile of infinity stones in the TVA, the explanation I think is pretty simple. We learn in End Game that infinity stones are tied to the flow of time, so the Avengers taking the stones can cause branches. They go and put them all back eventually and "clip all the branches" of time, but I doubt anyone else who gets their hands on one would be so thoughtful. So really, I think most of the TVA's job is just going to find anyone who got their hands on an infinity stone and by doing so created a branching timeline. They then delete that branch with their little reset devices, but have collected the stone as "evidence". This is going to leave you with a lot of extra infinity stones at the TVA over the course of infinity.
