And I think that in her head, if Vax and Keyleth got together, it'd mean they would settle down etc. and Vax wouldn't follow Vex on adventures and travels anymore. But yea, it's a very posessive love from Vex.

Vex'ahlia doesn't really dislike or hate Keyleth, but because of the twins' co-dependency issues (which Vex'ahlia has worse than Vax'ildan) she's making herself act like a bitch to Keyleth to protect the most important relationship she has. For so long, it was she and her brother against the world, and she's terrified of losing that bond, even to someone she likes. Yeah, we as viewers can see how close Vox Machina are growing and that Keyleth and Vax'ildan becoming a couple doesn't mean he would ditch his sister or stop caring about her, but the twins don't have many (or like, any) good examples of friendhsips and couples before this group, so she's acting on her fears. There are some dieties in Exandria that might make you choose between friends and their faith, depending on the situation, but the Everlight is one of the least likely to demand that. Her domains are Honesty, Healing and Redemption (and kicking the ass of those who reject redemption and/or glory in cruelty and slaughter), so she's big on second chances and letting people do good in a manner that suit them. For some, that is providing healing services and prayer in a temple, for some that is drinking, cursing and kicking evil's shins in battle.

It’s weird, I watched the campaign so I know (for the most part) what is gonna happen and I still get so wrapped up in the drama Percy with the “your face is what I saw when murder entered my heart” is such an amazing and powerful line!
