The anime doesn't really go into Kuzuki's backstory, and I won't cover it since it would be too long, but his fighting style is all about fast, unpredictable attacks (it's described like a striking snake) that can overwhelm an opponent before they can react, it's perfect against someone who is not expecting it (no one expects a master to try and take on a servant in close combat). Also, the knight classes (Saber, lancer, archer) have natural magic resistance, but individual Servants may have additional magic resistance based on their history, Saber has that which means lower level spells are completely negated when used against her and even stronger magic is reduced in effectiveness. Makes her a very good matchup against magic users, as shown when she just bodied through caster's spell.

It is worth remembering that Saber is not running full speed because she has Shirou as her master, who sucks at getting power to her. Just to support her problems here. But yeah, Kuzuki is a badass. And only the fact that Shirou managed to quite efficiently copy Archer gave Shirou any chance.

Kuzuki when I think about it is somewhere between the two extremes of Kiritsugu and Kirei. They're all killers, but there are differences between them all. Kiritsugu killed for a righteous cause, Kirei killed because it brought him joy. Kuzuki kills simply when he feels it's necessary, without pity or remorse, but also seemingly no pleasure.
