My favourite thing about Tohru an d Elmas relationship is that the clues were there about how Elma felt, whether it be he getting excited to hangout with Tohru on the neighbourhood watch or here wishing for both their shares of food. I've seen a lot of series try to do the "rivals who hate each other become friends" thing and it never really feels as organic as this one
