The Gourmet Faction are strange to understand. Gouls can't taste human food, so they can't actually season any of their dishes. They mostly just focus on Texture and Plating. That is why Rize mocked him and his group, saying their little club is laughable. They are essentially no better than butchers serving cuts of raw meat. Note: The audience was all there to eat Kaneki and there were a lot of them. They mostly just serve up a very small portion to the audience and the whole affair becomes similar to that of a wine tasting, which is why Sniffy saved Kaneki, as he won't be satisfied with eating only a miniscule portion of such a rare dish.

It's funny you mention the self defense stuff when Kaneki was fighting Taro. Originally, in the manga, Kaneki had been studying some self defense books and actually managed to break Taro's arm by copying a move he had read about.
