Btw, when she says age doesn't matter for arrancar's, she means it. Huenco Mundo is basically an Anarchy. Besides which, each of them is probably hundreds of years old.

What those three Arrancar girls used was their technique Quimera Parca (roughly translated to Reaper Chimera) which, as you rightly concluded, lets them combine their powers into one creature. The classic Greek Chimera is a combination of lion, goat and snake, with this version being a combination of lion, deer and snake for a twist on the classical version.

We don't get to see Momo cut loose often enough. She's really fun to watch since she's the only lieutenant to focus primarily on Kido instead of using their swords .
