This series inspired a lot of "dark magical girl" shows that followed it, and Mami's death is probably one of the most iconic scenes in this series. It's the "I don't think we're in Kansas anymore" moment.

Episode 3 is pretty much where this series begins showing its true colors. It's that first drop on a rollercoaster. Headless Mami jokes are pretty much the Nina/Alexander "Big... brother... Edward?" jokes of this series. Case in point: https://knowyourmeme.com/photos/782779-headless-mami always gives me a little giggle.

My favorite part about Mami is how much the producers tease the fans about her fate. My favorite two examples: 1) When the movie came out in theaters, the tickets had Mami's picture on them, with her body on the ticket and her head on the stub so that when you enter the theater, you have to tear her head off. When this series first aired they did everything they could to keep up the appearance that this was just your average cutesy magical girl series. The trailers were very innocent looking, they tried to keep the writer (Gen "the Urobutcher" Urobuchi who is known for writing some pretty messed up stuff) hidden, they didn't show the credits sequence until Episode 3 (the simple one you've seen for Episodes 1-2 was created for the DVD/BD release) and so on. Nowadays the series' reputation precedes itself and it's really rare for someone to get into it as blind as you have, but back then pretty much NOONE was prepared for this swift mood change. (Edit since I pressed Enter too early) Something worth noting that is only really expanded upon in side materials but really sheds light on Mami's character is that she deeply regrets only using her wish to save herself and not her family too. We also saw in these episodes that she has lived a very lonely life since then, with no close relatives to speak of and nobody but Kyubey to talk about her struggles with. This then presents an interesting inner conflict: on one hand she 's desperate for companionship and tries to play the role of the cool veteran in front of Madoka and Sayaka to get them to join, but on the other she tries to caution them whenever she gets too close to going through with it (like making sure they know what they want to wish for, saying that this is NOT a job you want if you can avoid it, etc). Something I really think illustrates this well is how her her apartment looks at first in Episode 2, and now in Episode 4.
