I feel like the priest is meant to be some kind of reference to the dark priest Shaft in the castlevania games, it's kinda hard to tell, the first season had a very anti church and religion message that wasn't really in any of the games, a lot of characters were religious, hell besides the whip some of the big re-occurring weapons in the game are holy water and the cross.

Yeah, this is an odd direction as I don't remember the Church ever being a main plotpoint in Castlevania. However, this does show things before Trevor went into Castlevania so there is that. I don't think there is an anti-religion message as Trevor doesn't seem anti-religious. It seems clear that the priest is another one of those "twists the word of God to fit their own agenda" or "does these shitty things and tries to excuse his actions by blaming it on God" type priests. Classic medieval villainous priests.
