This arc really does personify Romanticism and adventure! I’m so glad you already see that, I feel as though it’s the perfect mindset to have to really enjoy this arc. This arc often has very mixed reviews due to its more adventure vibe and a potential step down from Crocodile’s drama, but I love it and I’m sure you will too! I’m a big fan of all the banter the Strawhats share with each other and there’s a LOT of it in this arc!

Going back to the thing in the bar: It's not that Luffy just wanted to honor Shanks. He and Zoro were totally prepared to kick their asses. But once Bellamy mentioned how people that dream are idiots in the "new era", Luffy realized that he wasn't worth it. Just some guy who doesn't even have a dream/goal. It would have been an empty fight. That's also what the pie guy was referring to. Just not worth it. Just an explanation for some people who seem pissed because they didn't fight back.

I think we need to take a second and appreciate how good the music in One Piece is... it doesn't get proper credit but it always sets the mood very nicely!

Redemption

Mihawk is just happy to see them grow and make it probably. Since he isn't a Bounty Hunter and he liked them when he met them. 0 bounty to 30 mil Luffy to 100 mil Luffy and 60 mil Zoro.
