Personally i never really watched too many of the side episodes especially the recap ones since its only a perspective shift to Veldora, which is interesting in a way but def not mandatory knowledge. Personally I think its best to just watch it later as a buffer to wait for more content, plus its not like the knowledge from it is going to effect enjoyment for the rest of season 2 (I mean I enjoyed all of it just fine without anyway, also recaps are kinda boring by nature).

If you guys wanna skip the journal ep to go the the next one it wouldn't cause any problems watching wise so I think it's fine

The journal episodes are just recap episodes anyways. If you really want the authentic experience you do 12 episodes of slime diaries then recap.
