From what I've read in other comment sections, the ring that Himmel gave to Frieren did not appear previously in the story. The fact that we see it in episode 1 and 12 is apparently a tease by the animators to tell the LN/manga readers "that scene will happen during the season". There are apparently a few similar instances in the show, the general consensus seems to be that the animation team has greatly improved upon the manga (like Stark's fight against the dragon, which was apparently only 3 panels in the manga but was an entire scene with a great animation)
