Context for why Lorelei might be upset is that Lorelei doesn't want to be like her relationship with her mother, so took that to extremes. It was already highlighted in the earlier episodes that Rory feeling it necessary to have boundaries was new for her with Lorelei, but also in terms of boys and relationships in that she even kept it from Lane, her best friend. There are multiple things to Lorelei's reaction in that Rory has told her everything, Lorelei has not yet processed the degree to which her daughter is her own person ("You're me!" when she heard there was a boy" and Rory has gone from Moo moo dress book absorbed and not boy interested girl to this and in a very short time. I think the other important element is as much as she wants to protect Rory from the life she escaped, she also doesn't want her to make the same sacrifices, such as a good education.
