While Sylvanas has free will her undeath (and many other Forsaken's) has changed the way they experience emotions. In the case Sylvanas or Nathanos most of their emotions have been greatly reduced while their hatred was emphasized. The short story Dark Mirror and several books like War Crimes and Before the Storm explain this point.
