Oh, "mode" is just "fashion" in French. Could also be a brand, there are a few famous ones in the OP world! Yeah, there are a lot of rumours about what was planned and not in Whiskey Peak. From what I have heard, Oda has the major plot points mapped out, but inserts the details as he goes along. So he might have planned for a princess, but decided that it would be this specific character after he created her (I agree that her characterisation from Twin Capes to Whiskey Peak isn't exactly consistent, lol). And the reason for the Zoro/Luffy fight may be dumb, but it was still fun to see them trounce Mr 5 and Miss Valentine in such an offhand way.

I always interpreted baroque works as an organization and the whiskey peak people as bounty hunters, but now I am confused Im definitely gonna try rewatching it
