As for older anime, Cowboy Bebop and Evangelion are great places to start. I'd also recommend Great Teacher Onizuka and Serial Experiments Lain. I know the cut off was 2005, but I also want to recommend Samurai Champloo, but I think it ended in 2006.

I like the OP but I think the best songs were always at the endings in Inuyasha.

I definitely recommend reacting to the Inuyasha endings. Those are actually the iconic songs of Inuyasha not the openings.

You were asking about those sections at the end of the openings where they show a looping animation of some of the side characters. Those are there because when a show airs in japan there's usually a 10 second period where they put the companies that sponsor the shows. Typically it's a still screen where the sponsors display and they play a 10 second portion of the song where someone says "The following episode was provided by the following sponsors". So that's what those last 10 seconds are for.

Here are my 90s/early 200s recommendations. Slayers is a comedy series each season is 26 episodes but you can just watch the first season. Revolutionary Girl Utena is 39 episodes and is a classic action/romance show. Vision of Escaflowne is a shojou Isekai and 26 episodes. I’ll second the recommendation for Evangelion which is 26 episodes, plus the movie End of Evangelion. Don’t bother with Death/Rebirth which is a recap movie. I’d also recommend Ghost in the Shell Stand Alone Complex from 2002 which is 26 episodes and it has a second season as well, also with 26 episodes

Inuyasha loses his demon powers during the new moon. He tries to hide that as best he can. And yes, there is a problem with him going the other way. Kirara is a nekomata, a forked cat, by the way. Shippo is the fox demon. The monsters in InuYasha are largely hybrids of Japanese folklore, sometimes mix and matching things to suit their needs. While it's not an old anime, I would like you to react to Yashahime's OP. It's a sequel to InuYasha and there is about as much of a time gap between the two stories in universe and IRL. It only has four episodes at this point, so there is only one OP at the moment.

I do second Slayers, Vision of Escaflowne, and Ghost in the Shell SAC. I never saw enough of Revolutionary Girl Utena to get a feel for it, but I really like the Ghost in the Shell OP.

I am a fan of Full Metal Panic!, but it's debatable if it meets the criteria you set. It has four seasons, the third one airing in 2005, but more recently they came out with a forth season in 2018. There are a total of 61 episodes, plus a stand along OVA, but I hope they make more. I'm afraid it hasn't finished exactly, but the light novel it's based on has finished during the gap. There is Full Metal Panic!, Full Metal Panic? Fumoffu, Full Metal Panic! The Second Raid, and Full Metal Panic! Invisible Victory. For a nice slice of life anime there is Azumanga Daioh, which stars a group of high school girls and two of their teachers. 26 episodes. Dragon Half is from the 90's. It's short but sweet with only two episodes. They put a lot of effort into the English dub. If you want to watch Ghost Stories then go with the ADV dub. It didn't do well in Japan, so aside from four simple rules they let the English dubbing company do what ever they wanted with it. Gun X Sword is a mecha from 2005 with 26 episodes. It's about a man traveling the world in a tuxedo, trying to find his bride's killer. The Irresponsible Captain Tylor is from the 90's with 26 episodes. It stars a man who somehow bumbles his way into a captain's seat in a space navy and doesn't seem to have any idea what he's doing. It's a parody anime of sorts and rather fun, but largely forgotten. Vandread is one I loved when I was young. It was one of the few anime airing on TV at the time, but I eventually got the DVDs when I could. It has 26 episodes between two seasons. It's about three guys who've never seen a woman before suddenly getting trapped on a space ship full of them and getting flung a year away from home. They have to make it back while being hounded by a mysterious enemy and along the way they encounter other planets with humans on them.

If you want somthing diffrent I recommend "Scryed ", 26episode serise made in 2001 .It is made by same Director of "Code Geass" and "Gun X Sword" . It is unknown and underrated to audience outside Japan. Ive never seen any one react to it.
