Vanaheim Berserker that summons 6 enemies >>>>>>>>> ANY boss in the game. Maybe it's because I try to beat bosses as soon as I have access to them regardless if I'm underleveled or not but that Berserker took me 3 hours to beat. Other Berserkers and the hardest boss in the game (don't want to name it) all took less than 1 hour to beat at the most. This was in GMGOW difficulty so maybe that changes things but "Hvitserkr the Bold" was just frustrating.

I'm so glad you did the Berserker while 3+ levels underleveled. Shit is a feat but also, it gives you a boost of confidence whenever you fight the other ones. IMO Sigrun is still harder than any boss in this game. If you can beat Sigrun, any boss is possible.
