I have noticed that you almost always do the face and hair last so it would be a fun twist to do the face and hair first. Since you can't see your own face, it gives us an opportunity where he has no idea that he is changing and it's the friend who notices and reacts first.

Hands first as mentioned above, so the character sees the transformation happening clearly, and can follow its whole progress. Head last, so the original personality remains intact right until the end, and then the other character has to adapt to the new persona.
