I was a fan of the Rem/Subaru ship since the first time I saw her react to him saying he was demonicly inspired. I never really shipped him with Amelia because I felt like she didn't ever have feelings for him whatsoever. Typical she loves him but he loves someone else and that person doesn't feel the same kind of trope. At least that's how I saw it the first time watching. Watching your reactions is only my second time through. To be honest I wasn't the biggest fan of this show, but going through it again I actually am liking it a bit more.

There is another OVA of Re:Zero, called frozen bonds, that you should watch before eventually getting into Season 2, it deals with some of Emilia's backstory. Also FYI Mimi is 14 at this point, just like her "younger" brothers (they are triplets). So while they still look quite young for their age, and that seems to be a genetic/racial thing, it's not like they are actually adults atm, they are actually young teenagers.
