What Legends books that DON'T conflict with the current cannon should I read? I'm soaking up all the Star Wars content I can these days and I want more stories, but what I don't want to do is absorb something that is going to confuse me.

There are some contradictions here and there, but I think Darth Plagueis and the Darth Bane Trilogy are mostly safe. Both give some really great context to the prequels and the Sith of the Old Republic respectively.
