I personally prefer Italian meringue to Swiss meringue. Swiss tends to be a little denser than French or Italian, and Italian is more stable than French. Additionally, it's preferable to sift the almond flour and powdered sugar mixture onto a parchment-lined sheet pan for two reasons: The mixture can desiccate overnight, and it's easier to transfer the mixture into a robocoupe so you can pulse one more time before sifting into the bowl. I was anticipating some baking expertise from people with experience! I haven’t tried making macarons myself before but from the research I did, I read some of the debate among the Swiss and Italian merengue which I both here are more manageable than a French one. What I understand about the Swiss method is that it makes it easier to fold since the Italian merengue tends to be more thin.
