Nezuko is the only one that never consumed humans or even their blood. No demon in 1000 years did that. My guess is that... if turning into a demon makes you crave humans' flesh intensively, by refusing to eat humans, you refused to turn into a complete demon. Every demon succumbed to the hunger. Even Tamayo was once in Muzan's control, until she broke free with her will. She must have consumed humans as well. She is atleast known rn to be consuming blood once in a while. Nezuko didn't ever. So her body could have mutated to revert back to being human a little cuz she never really turned fully demon by appetizing on humans. By turning part human, you become a demon with perks of a demon with capability to walk in sunlight. PS. I don't know what the author had in mind but this is my way of justifying what happened. To be able to digest this random mutation myself, lol.

Spoilers . . . . . . . . . I think it's because of her lineage since tanjiro also is immune to the sun, I doubt nezuko is the first demon to be under the sun without eating a human
