I think that opening the B and B sooner would interfere with your Easter celebration that involves your close family and friends.

The Gite plan has merit and I think you should to strengthen the overall sustainability of the Chateau, but what if you created a small number of more rustic (for lack of a better word) guest rooms for use by volunteers or those who desire a more modest accomodation? It would seem like something of this order would be more easily achievable in the short term. Regarding the surveys, what would it be like if you called for a volunteer structural engineer to assess and recommend a plan for the Salon? I've also wondered about how you could do an off-season, self-service type B&B offering that would be low-maintenance for you, yet allow for guests/volunteers who might adore the seasonal experience at LaLande.
