Decided to do something that gives us both:

The difficulty of the game determines the outfit and personality at the start.

For easy, she's in a white tank-top and loose camo pants that's meant to be a workout outfit. She's just finished a jog and is happy to be here and rest.

For normal, she's in the casual dress, she's kind, and friendly, happy to try out some foods that you've been cooking lately (that's the excuse you gave her to get her to accept.)

And for hard, she shows up at the end of a long shift on her way home. Still in uniform, still in work mode. she's serious, and stern about things.

Each difficulty she has a different level of resistance to the remote you use.

Now it will be a lot of work to have different levels like this, I wanted this to be a quick thing I can bang out. But now it's getting out there.

Honestly I may see if anyone wants to go through this and help me write it/playtest it.
