About Mezato having found out Mob's blood type - that's a Japanese superstitious thing. They think that blood types can be used to judge a person's character and how compatible they are with other people and suchlike. The western equivalent would be something like finding out his star sign. That's also why the character cards in My Hero Academia that they show mid-episode have blood types on them. So although it might seem creepy to audiences in the western world, it's less so to Japanese viewers.

Mob Psycho season 3 was confirmed like a couple days ago. Pretty sure it will be the final season. Don't think we have a possible release date yet.

So to specify mobs percentage build up is based on the little gradual build up of emotions inside him. People can correct me if I am wrong. I really like mob psycho but I am not super into it in order to know everything about it. Certain events and moments can cause a certain build up in percentage. Like in this episode when Mob was compared to the main guy in the workout club you saw that the percentage jumped up some and it showed his muscles. It isn't a set percent and it can build up faster depending on the situations and his emotional build up.

If you want more good short anime (since you asked for more recommendations on those) watch Neon Genesis Evangelion pls, it's legendary for a reason. Or Steins;Gate, that's also a classic and one of the most highly regarded anime ever. Both of those would also be a bit of a change from the kind of stuff you usually watch. Also please, Kaguya-Sama: Love is War, you watched 2 episodes of it for reaction request and really liked it, I want more ree. One of the most popular and well-loved romance/comedy shows from recent times. For actiony stuff you could try some of the good Fate shows like Fate/Zero and Fate UBW (same studio as Demon Slayer, looks amazing and has interesting stories/themes) All of these are only about 24 or so episodes each (except Kaguya which will get a 3rd season eventually which would bring it up to 36)
