1. Parmigiana 🍆 : Vegetarian-Safe. Parmigiana, is an Italian dish made with fried, sliced aubergine layered with cheese and tomato sauce, then baked. 

2. Panzanella 🥗 : Vegetarian-Safe, Lactose Free. Panzanella is a chopped salad of soaked stale bread, onions and tomatoes that is popular in the summer. It often includes cucumbers, sometimes basil and is dressed with olive oil and vinegar.
