Outlast your competition.

People come and go when it comes to professions and farming and people jump over to new farms in the hopes of more gold. Being consistent in your approach to your routine will outlast any competition because while there in your market, yes, supply will be high but once they move on and the prices stabilise then you regain that market. This is why i'm never worried about prices going up or down to much, because in the short term I may make only little gold but in the long run I will gain more gold than a trend chaser. :)
