I haven't played paintball myself (though I mean to try it sometime), but I'm pretty sure you have to wear at least a face mask in real games. I think that the ones they were using in this episode must have been very low power!

yeah you do have to wear masks, mostly to protect your eyes. The paint balls only sting a little and leave a small abrasion. If you have thick clothes like a jeans jacket you won't really feel more than a slight "dud" So the masks are really solely for the eyes. So unless you aim for peoples heads (which you usually do) you can technically play without a mask no prob. Probably still hurts more to be hit in the face than anywhere else i assume. (never played without a mask before.)

I've been Googling around, and it seems like the power of paintball guns does vary, for example there are lower powered ones intended to be used by children. Since Dean Pelton was shot on the bare skin of his forehead, maybe they used a low powered one for that.
