Al can move his body with his helmet off because the blood seal is on his body. If it were on his head, then I don't believe he would be able to move his body with the head detached. Also the 3 sins are named Lust, Gluttony and Envy!

The one next to Lust was Envy. Also Kimbley was shown in the first episode talking to the ice alchemist

As others have said, the third one was Envy. Or as I refer to him, the androgynous palm tree

rewatching the series again along with you has made me realise that fmab is focusing on Armstrong more than the first fma version did (in this first part of the show). After quite some time from when I'd last seen the show I was expecting a slightly bigger focus on Hughes so i was a little surprised to see how the show is having the boys (and the audience) "bond" with armstrong so early on, rather then Hughes. But thinking about it it makes sense (for reasons I wont go int due to spoilers and making this comment an even bigger essay). When reading the comments under your last reaction you said he hasn't had much of a role yet, which is very true (and what i was surprised about) but i hope (and think) this episode has made learn more about his character and I think the next ones will as well

As a response to your question at the start, yes memories like that do exist. They are often called photographic memories but eidedic is the more proper term and can vary in effectiveness

Kimbly, the guy in the prison, was talking to the Freezing Alchemist in the first episode. They both were soldiers in the Ishvalan war

The last end credits scene with Winery did have to deal with why ed's arm came off. Also Colonel Hughes is one of my favorites! <3

the lady in the dress is lust, the one who carried Ed is envy, and the bald one is gluttony. And each of their names plays into the character, which you will learn later on.

The appearance of the other disembodied souls gives a hint to the bigger world of alchemy. It would be fun to see you react to ATLA again and then The Legend of Korra.
