The reason Damon doesn't want to hurt Elena isn't because she looks like Katherine. If you go back to 1x3, Elena said she was sorry that Damon had lost Katherine too. She was nice and caring towards him without motive. She didn't want to get in his pants, she didn't want anything from him, she was just being nice to him. He was genuinely shocked at the time and it stuck with him. She is also honest with him, again something that means a lot to him. A lot of questions you have raised will be answered at some point. Stefan trying to get Vicki on the animal diet at the beginning was a terrible idea. Until she knew how to be around human blood without hurting anyone, she would always be dangerous. She needed to learn how to not kill people, and the only way to do that was with experience. Had she have been able to control snatch, eat, erase, she wouldn't have been a threat to Jeremy. Stefan was taking her choices away which is why she rebelled and it ultimately led to her eventual death. Blood lust control is like learning to drive, you can't do it without experiencing what it is like behind the wheel on real roads. If someone around her cut themselves, without learning control, she wouldn't be able to resist the blood, and could end up killing them. Great reaction. Can't wait for the next one (I know, I'm greedy).
