Veldora is not the chaos dragon, remember, that goes way back to the start of the anime in season 1. Veldora was sealed in the cave by a hero, the one who rescued Shizu as well. Though, Milim's dad must have been a really powerful dragon, so its possible Veldora and Milim are related though.

Veldora is the Storm Dragon, not the Chaos Dragon, but Milim's father was one of the 4 true Dragons just like Veldora, the anime/ the subs doesn't really make that distinction clear.

Depends on if its something that should have come up already in the anime or not, I dont know when its mentioned in the light novel/manga. If its not something that should have come up yet in the anime, its a spoiler.

So I'm enjoying this season for the most part so far, but does anyone else feel like they've been doing a lot of padding with all the flashbacks and recaps etc.?

I was curious what the next episode title, Megiddo, meant. "Megiddo is know for its historical geographical, and theological importance especially under it's Greek name "armageddon"

Well in this episode I would agree, they could have probably gotten another 3-5 minutes content into it if they didn't spend so much time padding what Rimuru said with Flashbacks and retelling the Fairy Tale.
