Here is a basic tutorial for how to accomplish the shadow style I use for my animations to get the best out of these models.

I use various techniques from different creators, I shared them before, but today I won't share the shading style just yet (you can get them from my persona models or my byleth or asuka models I shared before in here anyway)

But today I'll go more indeep how to accomplish this style of detailing shadow shading for flat NPR toon shaded models, I shared the basic node configuration before, but here's a better explanation for it.

The advantage of this shading method is that you won't need to worry too much about Normals and faces configuration for your models, all you need is a good "flat" colors shaded model, the compositor will do the rest. Again this method is not perfect, is basically just a "cheat" to get more control over your shadows for your toon shaded models, you will still need to properly light your scenes, and for this to work well, you will need to get perfect "flat" lighting for your scene, meaning not getting too many lamps which can cause extra shadows. In fact, the less shadows are in your scene before rendering, the better.
