Sorry for the dumb question, but how do we go about customizing the UV maps? Do I use Blender or something?

You can make JPGs directly using Gimp, Photoshop or Affinity Photo/Designer. Just make sure the files are square (1024x1024, 2048x2048 and so on). The UV map indicates where the boundaries are. FYI I use Substance Painter for this kind of work.
