Have you tried stainless mesh? Or expanded plate? Both are more rigid than the wool and provide the surface area you want.

Not sure if someone's suggested this already, but I'd love to see your take on the vacuum infused flavoured cucumber thing. The basic idea is to submerge sticks of peeled cucumber in a liquid (an alcoholic drink like a Martini often), put them in a vacuum chamber to remove the air from them, and then when pressured back, the air pressure pushes the liquid into the cucumber, flavouring it. Great video. The way it freezes looks almost like when a liquid is supercooled and then disturbed/seeded.
