Croissants are my favorite thing to bake even though it's so involved. Once you get the measurements for the ingredients right, it's just a lot of physical labor, so it's quite therapeutic. I think it got done quickly because they had all the equipment. If you do this at home, it takes even longer than six hours because you need to let the dough rest so many times and also keep the dough and butter cold at all times. I once made croissants when the temperature was like 90 degrees Fahrenheit outside, and with my broken air-conditioning, the butter almost melted into the dough and ended up as just a piece of brioche and not a croissant lol
