Regarding Kimetsu no Yaiba/Demon Slayer… people give it good reviews mainly because they still keep the hype momentum from earlier seasons in themselves… I keep more words for the reactions, so I don’t spoil anything here, but it is pretty much about watching Tanjiro training just to let us know he has already learnt that before (again and again), so he is portrayed as being above others (like other ones, who are training). + in general it feels like they (the creators) just want to milk the show, so they are intentionally making everything longer than it was in the manga (for example one literally 5 minutes long walking scene…), which is not necessary at all, since the manga has ended… (So it is not the case as it used to be some years ago with cases like Naruto, where we would have to get 50 episodes a year, so that ended up with anime catching up on manga quickly…)

I do agree but I will say ep 8 and probably the rest when they come out are worth watching. I won’t spoil but it’s essential to the story so you shouldn’t skip those episodes at the very least.
