The handle should never be sticking out. Instead it should be turned inward. This will reduce the chance of any pot or pan getting knocked over and spilling on anyone or anything.

May I suggest a slight substitution? Dredge the chicken in potato starch and then bread it with panko bread crumbs. You will end up with a much crispier outside while still sealing in the juices of the chicken. Also use a hint of cayenne pepper in the seasoning mix.
