It's really a treat that you're enjoying the show so much! It's not the longest manga ever, no, but to it's benefit I think- doesn't waste any time with anything that's not important. I will say whenever the anime is finished, if you're still wishing there was more, please do consider reading the manga itself! The adaptation is very faithful, but there's still A Ton of material that exists for this world/characters that wasn't (or can't be) included in this show. Ryoko Kui, the artist, draws a lot of supplemental stuff, including some post-canon comics that explore what comes after. And each chapter of the manga has a sort of 'post credits' segment called Monster Tidbits where we get to see more character interactions while they give some extra facts about what monsters they encountered for that chapter!
