The blood circle thing in the center is a blood tank. When they slay creatures they harvest the blood in the gullies and this is pumped up into the tank. The blood is then transferred into containers. The organs are used as ingredients for magic experiences in the laboratory and the blood is used to feed the Devil army.
The creature is a beast of burden used to haul the cart to distribute the blood.
