I know there are some unhappy Kotomi's fans out there.

I can totally understand your frustrations. Let me explain, first, Kotomi and Karin will be 100% playable in the actual game, as you can see I've already reserved their slots in the gradol club report. They will be unlocked in the later part of the game. 

As for character development, I am planning to make the game as free as possible like the original Simgirls, so your decisions will eventually change the story and lead to different endings. 

For example, the gym practice scene in the demo, you may have noticed, I allowed players to choose whether they think Kotomi or Tomoko is the bad girl in that situation (in fact Kotomi is telling the truth and trying to protect her friends, and Tomoko is lying to cover up what she did), and in the finished version, player's decisions like this will absolutely change the story. But for this demo, I only have enough time to make one single path.  

On another note, I am actually sticking to the original character settings in the manga. If you read very carefully Book 1 of the DNA2 manga, Kotomi is more or less acting like that. She calls Junta a complete loser (not exactly the super kind and gentle type), she is quite nosy (when she saw Junta and Tomoko on the street she actually followed them to Sea Zone and called Ami to join) and she likes gossiping (first couple chapters of Book 2). 

Her character only changed drastically in Book 4 and later the Anime adaptation, still, she treated Junta very kindly only after witnessing the charm of the Mega-playboy. You can only tell if she's "really nice" or not, when there's another loser guy approach her again. 

All in all, I do plan to allow players to participate in her character development.
