I'd like to think that the fight between Anakin and Dooku in this episode is the exact moment where Palpatine knows that Anakin will be his next apprentice, and will make a far more powerful one than Dooku

He’s been grooming anakin to be his apprentice since phantom menace. He orchestrated this just to make anakin distrust the Jedi council more, and also push the Jedi council to do unethical things

Palpatine is essentially using Dooku as a skill check for Anakin. If Anakin is skilled enough to defeat arguably the greatest duelist in the Jedi order, then he would be perfect for being Palpatine's Apprentice. Dooku somewhat understands this and is actively trying to prove to Palpatine that Anakin is just a petulant child who isn't even worthy of the title. Dooku obviously doesn't want Anakin to succeed because that means he will be replaced. Replacement with Sith means death.
