I don't think I've ever heard of anyone who dislikes Toph. She's usually up there with Zuko and Iroh as favorite characters. I think Toph is the embodiment of what a lot of the person wish we were: strong willed, rebellious, care free, and intelligent. She has a lot of similarities to Zuko. The difference is Zuko struggles to come to terms with who he is and who wants to be, whereas Toph is herself and doesn't give an F what other people think about it

I wasn't a big fan of Toph the first time. I didn't dislike her, I was mostly just neutral on her. I am enjoying her character a lot more on the rewatch though. I also think the difference in teaching styles is required. With the waterbending, Aang was really good at it from the beginning, he was even showing up Katara in the first lesson. This time he was very much in his head and telling himself he couldn't do it. I don't know that Katara's teaching style would have helped him there.
