This is such an awesome introduction episode for Azula. Right off the bat, you can tell from just that first scene how ruthless she is and how much she differs from Zuko.

About the hair cutting scene! Hair means a lot to fire nation royalty. Everyone has long hair and the "crown" of a firelord is a hairpiece. Zuko in season one had a shaved head that he maintained throughout, all except for the spot on his head where the hairpiece would be fastened. He shaved all around his head because he brought shame to the fire nation and lost his honour, but at that point he left that section of hair growing, his root, his connection to being fire nation royalty, to being their prince. Him cutting that hair is him letting go of his claim to the throne and his position of being royalty [and the hope of becoming worthy of being the prince]. Also, that blade comes up again, and they translate what the characters mean, so keep that in mind as you watch further into season 2. This season is my favourite ATLA season, personally, so I'm very excited to see your reactions to it!
